Recipe – Irish Chocolate and Guinness cake
Have a go at making this and enjoy with a cup of Bewleys gold roast fresh ground coffee!
Makes three 1 lb loaves (or adjust accordingly dependant on size of your baking tin)
Ingredients
250ml Guinness
250gm Butter
75g Cocoa powder
400gm Caster sugar
150ml Sour cream
2 large eggs
275gm Plain flour
2.5 teaspoons bicarbonate of soda
Baking tins and parchment liners
Heat the Guinness and butter in a pan, while heating mix in cocoa powder and sugar, stir in until sugar dissolves. Beat eggs and sour cream and add to the mix. Whisk in flour and bicarbonate. Line your baking tins and split the mix equally into the tins and in a pre-heated oven cook at 160c for 30-35 minutes (some ovens may vary so test centre of the loaves with a wooden skewer and if skewer is still damp then bake for another 5-10 minutes until dry) then remove from the oven and allow to cool.
Topping for 3 loaves
Ingredients
300g cream cheese
150gm icing sugar
2 teaspoon corn flour
125ml whipping cream
Whip lightly cream cheese until smooth, sieve over icing sugar and cornflour and whisk in cream cheese. Semi whip cream and stir in slowly into the mixture. Once the loaves have cooled remove the from the tins and then cover the loaves with the cream cheese topping.
